My job description was expanded this week, and it added an entirely new element of pressure.
I'm judging a BBQ contest during Dodge City Days, but this isn't just a small town BBQ - this is huge. This is Kansas City Barbecue Society big. I will be joining a few other members of the High Plains Journal staff, and we'll be testing out some of the best chicken; pork ribs and shoulder; beef brisket, sirloin, and ribs in the southwest region of the state.
This contest is for the backyard chef that wants to showcase hidden talents. In other words, if you uncle set the garage on fire last year trying to "deep fry" poultry - this is the place for him.
This gig has some pressure attached, as the contest has state championship status. The winners will qualify for larger contests and supremo bragging rights. Not only will the winners be given status, but they'll be competing for $10,000 in cash and prizes. That ain't chump change.
I'm a little nervous, however, about the "anything goes" category. I'm not sure if that means any type of "meat" or any type of cut. Regardless, I hope I am not faced with something like this...
I wouldn't even know where to begin judging something like this. Do you judge the tan, the glasses, the flavor?
If this category truly is "anything (meat) goes" I probably won't be faced with this issue, I'll have bigger issues - I will probably be sampling my first goat.
I am also slightly nervous when it comes to flavoring said BBQ. This is the southwest region of the state. Down here grocery stores don't promote fruits and vegetables - they promote peppers, hot peppers. Maybe I won't have sinus issues when I get done. I can hope.
Luckily I'll be in good company. A couple of my colleagues have judged the contest before. This is the 20th year for the event. However, knowing the company I will be in - I'm positive this rookie will have more blog material following the contest.
Dodge City Days will be July 30 - August 8, so if you're in town (yes, I can see you all lining up to make travel arrangements now) check out all the activities taking place. I hear this is the time to be in Dodge, (in my opinion it might be the only time to be in Dodge).
